Recipe - Wild Blackberry & Apple crumble

If you follow me on Instagram you'll have seen Toby and my countless walks foraging for wild blackberries. 

 

This year there are thousands lining hedgerows in the village, it would have been rude not to of taken advantage! This recipe is comfort food at its best and the perfect end to an autumnal lunch. It's a fail safe recipe that takes no time at all.

 

You will need: 

 

For the filling:

300g apples {I used Braeburn as these grow on our tree}

200g wild blackberries {make sure you give these a real good rinse in cold water before you use them}

30g butter

50g demera sugar

 

For the crumble:
120g plain flour
50g ground almonds
100g butter
60g golden caster sugar

Custard or vanilla ice cream to serve.

1. Peel, core and cut the apples into 2cm dice. Put the butter and sugar in a bowl, cover with cling film and put into the microwave for 2 minutes or until the mixture turns to a light caramel. Stir in the apples and cook for 2 mins. Add the blackberries and cinnamon, and cook for 2 mins more.  

 

 

2. To serve, spoon the fruit into an ovenproof dish, top with the crumble mix, then put in the oven for 15 mins. 

 

3. The smell when you take it out of the oven is amazing! I like mine with cold vanilla custard but you can serve with anything you like, ice cream, pouring cream, warm

custard or just on its own.

Delicious Autumnal comfort food at its best.
